Not more than a 100 miles from where i live, on the wyoming border,  
is the Abbey of St. Walburga.
 
'The Abbey of St. Walburga is a  small community of contemplative  
Benedictine nuns located in a valley in northern Colorado, where the  
high plains meet the foothills of the Rocky Mountains.'
 
They have a small working farm and offer silent retreats for  
contemplation for individuals. They have seem to taken down the farm  
pictures on their web site but I am still considering spending a  
quiet week with them.
 
Colorado has quite a few religious communities like this from  
Buddhist to Christian which offer retreats to individuals. Some of  
them do have working farms like this one. 
 
I bet if you did a search on miniture horses the farm may come up on  
the internet.
